Dokuwiki - You will need to install PHP and Apache, Lighttpd, or another webserver. Let them decide what the wiki should contain.
OwnCloud - This requires a webserver and a database. Who needs Dropbox?
XBMC - They'll probably love this one, especially if you add a hard drive to store ripped movies.

I just found out that Android can be installed onto BBB. I don't know what the quality is at this time. You could also use Ubuntu, Arch Linux, etc.

I just ordered an Android media streamer box. I'm going to install a few apps so my wife can use it to watch Chinese shows without always hooking up her laptop. Maybe you could try that.

If you want to connect I/O, a weather station might be interesting, but I don't know what the sensors would cost.

Home automation? Maybe not, considering what it might cost for automation devices.

I'm not sure what else to suggest. Some things require a knowledge of electronics, money, and lots of time.

Can you think of something fun to do with 3 older laptops, 3 RPi's, 3 BeagleBone Blacks, a small bag of teenagers, and a network?

Beaglebone Black might be an alternative for you. The graphics resolution isn't as high, in case that is important to you. There is internal flash memory too, but it might not be as convenient to boot from the microSD chip as it is on the Pi.

Expensive.

Seriously though, a Prototyping Lab?

Thanks to Aaron for reminding me why I'm so darn conflicted about the Raspberry Pi, and why I keep thinking there's probably a better single-board computer for our Pi Lab.
